Tex-Mex Butternut Squash Fries

These fries are tasty!  You can make them quickly and eat them faster.  I think they are a great way to use up a squash instead of using it for soup.  If you don't have the Tex-Mex rub handy, try any of the others you might have.

Turkey Stock

There is nothing that beats using a home made stock in your soups and risottos.  This is one of the seasons people will usually eat some turkey so I thought I would give the recipe a try and let you know what I think of it before you are wondering what to do with your leftover turkey.  I found the stock to be very flavourful.  I just stuck it in my crock pot over night and was very happy with the results in the morning.  I hope you enjoy it too.

Minestrone Soup

Sunday evenings I usually try to make a soup so my husband and I can enjoy the leftovers for lunch during the week.  It is so easy to through the leftover soup into microwave safe containers and sticking them in the fridge.  The only problem I have sometimes is that my sisters have figured out my routine and will often stop by to steal some for their own meals.  Oh well, what else is family for, right?
Wow! I never realized how easy this soup is to make.  I was able to dice the veggies and let it simmer while tidying the house.  There was enough leftovers for three lunches next week.  If you want to add a little extra protein add some grated cheese of you choice to the top.

Egg Nog French Toast

One of the best parts about winter is Egg Nog.  I love it.  I try to find as many ways to use it as I can.  This is one of my favorite ways to incorperate it into breakfast.  I just add Egg Nog instead of milk to the recipe and it works out really well.   For the batter I will use one egg, and a quarter cup of Egg Nog for every 2 pieces of regular size bread I plan on using.

Gingerbread Pancakes

Wow these pancakes were so moist.  It was the first time I have tried a recipe calling for yogurt but I think I will try to find some others.  I think I know what we are going to have for breakfast on Christmas morning!

French-style Eggnog

There is nothing quite like homemade eggnog.  It always tastes so much better than the store bought stuff.  This is a great recipe that adds a little but more spice to it with the Poudre Douce.  I really like it.  I am looking forward to making a steamed eggnog for breakfast tomorrow!  If you were wondering the egg doesn't cook when you steam it.

Green Beans with Almonds

These beans tasted wonderful.  It is almost like the melted in your mouth.  I like how just a few ingredients were able to turn plain green beans into something so flavorful.  You can also try this recipe with your favorite dip mixes and other herb blends.
